Vitamin C, Ascorbic Acid, L-Ascorbic Acid

Vitamin C is the nutrient chemically known as ascorbic acid, which the body needs for a variety of functions. Nutritional science now knows four so-called stereoisomers of vitamin C. Stereoisomers are compounds which, despite having the same molecular formula, have different structures and/or modes of action. The stereoisomer that is important for the body is called L-ascorbic acid and of the four variants alone can have an effect on cells and tissue. Thus, the bioavailable form is L-ascorbin.

The name "ascorbin" comes from Latin. It was shaped by the recognized connections between the deficiency disease scurvy around the 1930s. The disease was known as the "disease of the seafarers" or the "disease of the earth" depending on the region. The name is thus derived from the meaning "without scurvy". Typical symptoms such as tiredness, weakness, bleeding gums and swollen hands and feet used to be common among seafarers and miners who did not eat fresh food regularly. Today, scurvy has almost completely disappeared, at least in industrialized countries.

What tasks is it responsible for?

The vitamin is highly valued for its positive effect on the immune system. The body needs the nutrient for the normal function of the immune system. Together with zinc, it serves to promote the function of the leukocytes and T cells in the immune system in the event of illness. If these body cells do not have a sufficient amount of the vital substance, they cannot perform their function and the natural defense system is weakened.

It is also needed so that other nutrients can be absorbed or important substances such as amino acids can be produced. This includes, for example, iron, which is obtained from plant-based foods and can be better absorbed if the vitamin C content is sufficient. The body itself needs vitamin C to produce bile acid, as well as for the production of sex, growth and stress hormones. This aspect of vitamin function in the body also explains the increased need during growth in children and adolescents, during pregnancy and in old age. In the case of allergies, a good vitamin C content in the blood supports the histamine balance. Due to the influence of the vital substance on the metabolism of the blood vessel walls, it can contribute to supporting medical treatment of diseases such as arteriosclerosis and high blood pressure.

Oxygen compounds that damage cells are known as so-called “free radicals”. They are caused by external influences such as the consumption of nicotine or medication and UV radiation. Such oxygen compounds are also formed in the body itself during metabolic processes. Vitamin C intercepts the free radicals and thus protects the cells as well as against the formation of harmful nitrosamines. Last but not least, it is important for the formation of collagen for the skin and joints and is involved in wound healing. It therefore has an effect on the normal connective tissue when fed into the body in sufficient quantities.

What is the daily requirement?

A healthy person needs between 90 and 110 mg a day for a good supply of vitamins. In the case of serious environmental influences, stress (stress, pregnancy, smoking, etc.) or illnesses and infections, the requirement can be increased. The German Society for Nutrition (DGE) therefore recommends up to 135 mg per day for women and 155 mg for men. In small children, the requirement is around 20 to 30 mg per day and should be increased with increasing age to around 90 to 100 mg up to puberty.

In Switzerland, the highest dosage permitted by law is 300 mg per day. Other countries allow a much higher dosage.

A deficiency in the vitamin C balance usually takes a little time before symptoms become apparent because the body can store a good amount of the water-soluble vitamin.

If the vitamin balance is not sufficiently enriched over a longer period of time, non-specific symptoms such as fatigue, muscle pain and immune deficiencies are the first signs, which later show up with bleeding, inflamed and bleeding gums (up to and including tooth loss), joint pain and water retention in the tissue. The connective tissue is also weakened because the body's ability to produce collagen, which affects the resilience and elasticity of the tissue, is reduced. In the case of wounds, there is a delay in wound healing. The most well-known vitamin C deficiency disease is scurvy.

An excess of vitamin C, on the other hand, is only possible with difficulty and is usually the result of problems with the metabolism. In a healthy person, excess of this water-soluble vitamin is excreted through the kidneys. In the case of metabolic diseases and renal dysfunction, insufficient excretion can occur.

As a result, symptoms such as indigestion or diarrhea appear in mild cases, but in severe cases the risk of the formation of kidney stones increases because the body metabolizes vitamin C into larger amounts of oxalic acid. In exceptional cases, an allergy to the vitamin can also occur. This shows up with itching in the mouth and throat when vitamin C is taken in, as well as blistering and a “furry feeling” on the tongue.

Although vitamin C is present in many foods on the daily menu, the bioavailability varies depending on the composition of the nutrients. In addition, vitamin C is only absorbed in the intestine.
